    Welcome to CPFM Sarlix. Bread is a great thread topic.

    I've been making a lot of pizza dough recently [just for the family not commercially] - it took a while but I finally got the hang of it. I use mostly white unbleached with a bit of whole wheat. I'll have to try sifting the flour. I use honey and very warm water to proof the yeast, I might try molasses.

    I've thought about starting to make bread too. My mom used to make bread and I really loved it.

    After having a bread maker for years, I've been limiting myself to making pizza dough. Besides being pretty foolproof and easy to experiment with, recipies usually suggest freezing half the amount, so you always have some extra on hand. There are a few examples of some easy and different pizza recipies by some of the Food Network Chefs in the March 2011 issue of Food Network Magazine.

    Back in the day, my family used to use one of those electric bread machines and it was... edible... I guess.

    A few years ago, my dad got into making sourdough by hand. I'm not exactly sure what all is involved, but I know he makes the dough and then lets it sit in the fridge for something like a week or two to get "sour" before baking. It's incredible. When I was in college, I used to take loaves back to my place for my roommates and they devoured it.

    My Mrs bought me a breadmaker a couple of years ago. I like the timer function whereby I can bung all the ingredients in, set a time delay and next day I wake up to a hot fresh loaf which I can then promptly demolish along with some nice smoked Wensleydale cheese and plenty of butter. OK, it's not quite gourmet bread, but being hot and fresh it's still bloomin' delicious!

    It's also a nice low-effort means of knocking up a batch of dough with which to make rolls or baguettes in the oven. These usually have a better texture and flavour than the machine-baked loaves but at the expense of more fussing and mess in the kitchen!

    My nana made rolls every Saturday and they took ages to rise but kneeding them wa very tough work as I recall.
    I wonder if anyone might have a recipe for white flour roll.
    She grew up down south in Clover,Va. so I'm kinda' looking for a
    recipe from someone who might be familiar with southern cooking?
    Any help would be greatly appreciated!

    Yikes!!!

    OK ... I'm not the insurgent-slash-victim here, but I have been shut out of CPF Marketplace for a number of months now. I start hunting for stuff about how to fix this, then get distracted reading about Fenix TK45s or Cree LR6es and never get back to this administrative protocvol-type stuff...

    I *have* made a numbrer of posts (over in CPF) and would really like to get to the Good Deals areas again, so... [[ COMING UP: BREAD TALK!!! ]]

    Does anyone know how to make real New York - style bialys? (They're like onion bagels, but crushed in the center.) Can't get any around here and I'm only 50 miles out of NYC!!!

    My wife is an excellent cook but, believe it or not, she's never made bread. Not even that Pillsbury dough-boy crack-em-open dessert roll type of thing.

    I've explained to her that you need water, flour, yeast and technique. Perhaps some pepperonis to fold into the dough. Is that good enough?

    Not to get off topic, but I have been trying the pizza dough thing, but no luck. Comes out with no taste, any recipes, or recommendations?

    Most recipes don't use oil and treat the recipe like a bread dough. Use olive oil, lots of it. This may be surprising but the olive oil is what gives the dough body and flavor. If you've ever had good 'Greek' pizza, i.e. the thick buttery crust, this is delicious because they use a liberal amount of olive oil. Also, try adding extra sugar to the dough. Even if the yeast doesn't consume it all the sugar caramelizes on the surface of the dough and makes more flavor.

    I make my own bread, too and I think I've got pretty good in it.

    Used to live in New Mexico, ever taste Indian bread right out of the oven. Can't beat it...
