I've been making a lot of pizza dough recently [just for the family not commercially] - it took a while but I finally got the hang of it. I use mostly white unbleached with a bit of whole wheat. I'll have to try sifting the flour. I use honey and very warm water to proof the yeast, I might try molasses.
I've thought about starting to make bread too. My mom used to make bread and I really loved it.
